  • 1 cup all-purpose flour
  • 1 cup protein powder (unflavored or mild-flavored)
  • 1 cup shredded cheese (cheddar or your favorite melting cheese)
  • 1/2 cup milk (dairy or unsweetened plant milk)
  • 1/4 cup Greek yogurt (plain)
  • 1/4 cup melted butter (or cold cubed butter)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Optional: herbs or spices such as garlic powder or onion powder

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, protein powder, baking powder, salt, and pepper until evenly combined.
  3. In a separate bowl, whisk the milk, Greek yogurt, and melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix; a few small streaks of flour are okay.
  5. Fold in the shredded cheese and any optional herbs or spices you like.
  6. Use a spoon or cookie scoop to drop mounds of dough onto the prepared baking sheet, leaving about 2 inches between each.
  7. Bake for 12 to 15 minutes, until the tops are golden brown and a toothpick inserted in the center comes out clean.
  8. Let the biscuits cool slightly on the baking sheet for a few minutes before transferring to a rack. Serve warm or let cool completely before storing.

Notes

For lower-fat biscuits, swap melted butter for a neutral oil. If the dough seems too dry, add milk a teaspoon at a time.
