Elevated chocolate chip cookies with a nutty, caramel flavor from brown butter, offering a crisp edge and soft, chewy center.

  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt the butter in a medium saucepan over medium heat, stirring constantly until browned (5–7 minutes). Remove from heat.
  3. Let the brown butter cool for a few minutes, then whisk with dark brown sugar and granulated sugar until smooth.
  4. Add eggs one at a time, mixing well after each, then stir in vanilla.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips.
  7. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing 2 inches apart.
  8. Bake for 10–12 minutes until edges are golden and centers look set but slightly soft.
  9. Let cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a chewier cookie, replace 1/4 cup flour with 1/4 cup bread flour. Use European-style butter for a richer flavor. To make gluten-free, use a 1:1 gluten-free flour blend and add xanthan gum if needed.
