Juicy chicken thighs glazed with a sweet-savory brown sugar and soy mixture, baked to perfection for a comforting weeknight dinner.

  • 4 chicken thighs (bone-in, skin-on recommended)
  • 1/4 cup brown sugar (light or dark)
  • 2 tablespoons soy sauce (use low-sodium if preferred)
  • 1 tablespoon olive oil (or another neutral oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat the oven to 400°F (200°C) and place a rack in the center.
  2. Whisk together the brown sugar, soy sauce, garlic powder, onion powder, and a pinch of salt and pepper until the sugar dissolves a bit.
  3. Warm the olive oil in a large oven-safe skillet over medium heat. Pat the chicken skin dry with paper towels and season both sides lightly with salt and pepper.
  4. Add the thighs skin-side down and sear until the skin is golden and crisp, about 4 to 5 minutes.
  5. Flip the thighs, spoon the brown sugar mixture evenly over the tops, and immediately transfer the skillet to the hot oven.
  6. Bake until the chicken reaches 165°F (74°C) at the thickest part and the glaze is bubbling, about 20 to 25 minutes.
  7. Let the thighs rest for 5 minutes before serving and sprinkle with chopped green onions if using.

Notes

Swap coconut sugar for a lower-browned flavor, use tamari for a gluten-free option, or choose boneless thighs for a shorter bake time.
