A creamy, crunchy chicken casserole perfect for busy weeknights, utilizing pantry staples and leftover chicken.

  • 3 cups cooked chicken, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream, plain
  • 1 cup shredded cheddar cheese, divided
  • 1 cup crushed butter crackers
  • 1/2 cup melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  2. Whisk together the cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper until smooth.
  3. Fold in the shredded chicken and 1/2 cup of shredded cheddar cheese until evenly coated.
  4. Transfer the chicken mixture to the greased casserole dish and level the surface.
  5. Mix crushed butter crackers with melted butter, then spread over the chicken mixture, pressing lightly.
  6. Sprinkle the remaining 1/2 cup shredded cheddar cheese on top.
  7. Bake for 25 to 30 minutes until bubbly and the top is golden brown.
  8. Let cool slightly before serving.

Notes

For a lower fat version, replace half the sour cream with yogurt and reduce the melted butter to 1/3 cup.
