1 pound Cajun-seasoned steak tips
1 pound rigatoni pasta
1 cup freshly grated Parmesan cheese
1 cup heavy cream
2 tablespoons butter
2 to 3 cloves garlic, minced
2 tablespoons olive oil
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Bring a large pot of well salted water to a boil. Add rigatoni and cook according to package directions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium high heat. Add the Cajun-seasoned steak tips in a single layer and sear until browned and cooked through, about 3 to 5 minutes per side depending on size. Remove the steak tips to a plate and tent with foil.
In the same skillet, reduce heat to medium and add butter. When it melts, stir in the minced garlic and cook until fragrant, about 30 seconds to 1 minute.
Pour in the heavy cream and bring it to a gentle simmer, scraping up any browned bits from the pan.
Remove the skillet from heat and gradually stir in the grated Parmesan until the sauce is smooth.
Add the cooked rigatoni to the skillet and toss to coat every piece of pasta.
Return the cooked steak tips to the pan and toss until heated through. Taste and season with salt and pepper as needed.
Plate immediately and garnish with chopped parsley.
Notes
For a lighter version, swap half the cream for low fat milk. For vegetarian, replace steak with seared mushrooms and adjust Cajun seasoning.
