Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese or feta
  • 1/4 cup chopped green onions (scallions)
  • 1/4 cup chopped nuts (walnuts or pecans)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs for garnish, optional

Instructions

  1. Soften the cream cheese so it blends smoothly.
  2. Fold in cheddar, blue cheese or feta, scallions, nuts, and seasonings.
  3. Shape the mixture into a ball, chill to firm up, then roll in extra nuts or herbs.
  4. Put the softened cream cheese into a medium mixing bowl. Use a rubber spatula or an electric mixer on low.
  5. Add the shredded cheddar and crumbled blue cheese or feta. Mix until evenly combined.
  6. Stir in the chopped green onions and chopped nuts. Add garlic powder, onion powder, and a pinch of salt and pepper. Taste and adjust seasoning.
  7. Scoop the blended cheese onto a piece of plastic wrap. Shape it into a tight ball with your hands or using the sides of the wrap to form a smooth surface.
  8. Wrap the cheese ball well and refrigerate for at least 2 hours so it firms up.
  9. When ready to serve, unwrap and roll the cheese ball in extra chopped nuts or fresh herbs for color and crunch.
