Cheeseburger Eggrolls

A playful mashup of cheeseburger flavors wrapped in crispy eggroll skins, perfect for game nights or as a fun appetizer.

Ingredients

  • 1 lb ground beef (80/20)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • Eggroll wrappers
  • Salt and black pepper, to taste
  • Neutral oil for frying (vegetable or canola)

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef, diced onion, and minced garlic.
  2. Cook, breaking the beef into pieces, until it is fully browned and the onions are soft. Season with salt and pepper.
  3. Remove the skillet from heat and let the mixture cool for a few minutes. Stir in the shredded cheddar until it melts and the filling comes together.
  4. Place an eggroll wrapper on a clean surface with a corner pointing toward you. Spoon about 2 tablespoons of the beef mixture near the corner.
  5. Fold the bottom corner over the filling, fold in both sides snugly, then roll up tightly to seal. Dab the final corner with a little water to help it stick.
  6. Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the eggrolls in batches, turning occasionally, until they are golden brown and crisp, about 2 to 4 minutes per batch depending on size.
  7. Transfer to paper towels to drain and serve hot.

Notes

You can swap shredded cheddar for a milder American cheese. Use extra-thin wrappers for a lighter shell or thicker ones for more crunch.
