A simple and satisfying dish that transforms your favorite burrito flavors into a comforting baked meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked rice
  • 1 cup salsa
  • 1 cup cheese, shredded (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken, black beans, corn, cooked rice, salsa, cumin, chili powder, and salt and pepper in a large mixing bowl. Mix thoroughly until well combined.
  3. Transfer the mixture to a greased casserole dish, spreading it evenly.
  4. Sprinkle the shredded cheese generously over the top.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
