Satisfying and flavorful enchiladas filled with seasoned ground beef, rich enchilada sauce, and gooey cheese, all wrapped in soft tortillas.

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce (red or green)
  • 1 can (4 oz) diced green chilies (optional)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1012 corn tortillas
  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1/2 cup sour cream (for serving, optional)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Cook the ground beef until browned and crumbly.
  2. Sauté onions and garlic until soft.
  3. Add spices and enchilada sauce to the beef mixture.
  4. Warm tortillas for easy rolling.
  5. Fill and roll each tortilla, placing them in a baking dish.
  6. Top with cheese and bake until golden.
