Fast Scalloped Potatoes

A creamy, cheesy bake that comes together quickly and is perfect for busy weeknights.

Ingredients

  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Milk
  • 1 cup Shredded cheddar cheese
  • 1 teaspoon Salt
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Pepper
  • 4 medium Potatoes
  • 1 teaspoon Paprika

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish.
  2. Slice the potatoes 1/8 to 1/4 inch thick.
  3. Melt the butter in a medium saucepan, then add the flour and cook for about 1 minute.
  4. Slowly whisk in the milk until the sauce is smooth and starts to thicken.
  5. Stir in 3/4 cup of shredded cheddar, salt, Worcestershire sauce, and pepper until the cheese melts.
  6. Arrange half of the potato slices in the baking dish, pour half of the cheese sauce over them, and repeat.
  7. Sprinkle the remaining cheese on top and dust with paprika.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 to 20 minutes until the top is golden and bubbly.
  9. Let rest for 5 minutes before serving.

Notes

Yukon Gold potatoes give a creamier texture; Russets give a fluffier one. For dairy-free versions, use plant-based milk and dairy-free cheese.
