These Cheesy Stuffed Meatloaf Bites are bite-sized comfort snacks filled with gooey melted cheese, perfect for cozy nights or game days.

  • 1 pound Ground Beef (or turkey or chicken)
  • 1 cup Breadcrumbs (gluten-free if needed)
  • 1/4 cup Milk (or almond milk)
  • 1 large Egg (or applesauce for vegetarian)
  • 1 small Onion (or shallots)
  • 2 cloves Garlic (or jarred minced garlic)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Worcestershire Sauce (or soy sauce)
  • 1/2 cup Ketchup (or barbecue sauce)
  • 1 tablespoon Mustard (or honey mustard)
  • 1 cup Cheddar Cheese (or mozzarella or pepper jack)
  • 1/4 cup Fresh Parsley (or cilantro)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground beef, breadcrumbs, milk, egg, diced onion, minced garlic, salt, pepper, Worcestershire sauce, ketchup, and mustard in a large mixing bowl. Mix well until fully combined.
  3. Take a small portion of the mixture and flatten it in the palm of your hand. Place a cube of cheese in the center and fold the meat around it, sealing the edges.
  4. Repeat this process until all the mixture is formed into bites.
  5. Place the meatloaf bites on a lined baking sheet, ensuring they are spaced evenly apart.
  6. Bake for 20-25 minutes or until the internal temperature reaches 160°F (71°C).

Notes

Serve with marinara sauce for dipping or alongside a fresh salad. To add a fun twist, top with crushed tortilla chips and diced jalapeños.
