A quick and creamy Chicken Caesar Pasta Salad, perfect for lunch or light dinners, featuring rotini pasta and fresh ingredients.

  • 8 oz rotini pasta
  • 2 cups cooked chicken, diced (rotisserie or baked)
  • 1 cup Romaine lettuce, chopped
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup cherry tomatoes, halved
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and cook the rotini according to package directions until al dente.
  2. Drain and rinse under cold water to stop the cooking and cool the pasta.
  3. Toss with a small drizzle of olive oil if you’re not serving immediately to prevent sticking.
  4. Combine the cooled pasta, diced cooked chicken, chopped Romaine, Caesar dressing, grated Parmesan, and halved cherry tomatoes in a large bowl.
  5. Toss gently until everything is evenly coated.
  6. Taste and season with salt and freshly cracked black pepper as needed.
  7. Cover and chill in the refrigerator for about 30 minutes before serving to let flavors meld.

Notes

Use freshly grated Parmesan for better texture and flavor. Reserve lettuce and tomatoes to add just before serving for crispness.
