A quick and easy Chicken Pesto Pasta Salad made with tender chicken, homemade pesto, and crisp vegetables, perfect for packed lunches or quick family dinners.

Ingredients

  • 2 cups cooked pasta (penne or rotini)
  • 1 cup cooked chicken, diced
  • 1/2 cup homemade basil pesto
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumbers, diced
  • 1/4 cup red onion, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook and cool the pasta until al dente.
  2. Dice cooked chicken into bite-size pieces and confirm it reached 165°F during cooking.
  3. Halve cherry tomatoes and dice cucumbers and red onion for even distribution.
  4. Mix pasta, chicken, pesto, and vegetables in a large bowl.
  5. Toss and season, then chill briefly or serve at room temperature.

Notes

Chill the salad for 30 minutes before serving to allow the flavors to meld. Can swap ingredients for variations.
