A warm and comforting dish that combines the classic flavors of chicken pot pie into a hearty pasta meal, perfect for busy weeknights.

  • 2 cups cooked pasta
  • 1 lb chicken breast, diced
  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. In a slow cooker, combine the diced chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
  2. Stir well to combine all ingredients thoroughly.
  3. Cover and cook on low for 6 hours or on high for 3 hours.
  4. About 30 minutes before serving, stir in the cooked pasta and shredded cheddar cheese.
  5. Mix until the cheese is melted and everything is heated through.

Notes

For a vegetarian version, substitute with veggie stock and plant-based cream soup. Adjust seasonings to taste, especially due to the sodium content of chicken broth.
