A refreshing salad featuring juicy watermelon, crisp cucumber, and tangy feta, perfect for summer days or as a light lunch.

Ingredients

  • 4 cups watermelon, cubed (seedless or seeds removed)
  • 1 cup cucumber, diced (English or Persian cucumber preferred)
  • 1 cup feta cheese, crumbled (use block feta for best texture)
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice (freshly squeezed)
  • Salt and pepper to taste
  • Fresh mint or basil for garnish (optional)

Instructions

  1. Place the cubed watermelon, diced cucumber, crumbled feta, and finely chopped red onion in a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, lime juice, a pinch of salt, and a few grinds of black pepper until emulsified.
  3. Taste and adjust seasoning.
  4. Drizzle the dressing over the salad and toss gently with a large spoon to combine.
  5. Garnish with fresh mint or basil leaves if desired.
  6. Chill in the refrigerator for 10 to 20 minutes, then serve cold.

Notes

Best if eaten within 24 hours. Store dressing separately to maintain texture.
