  • 1/2 cup almond butter (or peanut butter)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups rolled oats (gluten-free if needed)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chocolate chips
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Combine the mashed bananas, almond butter, maple syrup, and vanilla extract in a mixing bowl.
  3. Mix together oats, salt, cinnamon, chocolate chips, and walnuts in a separate bowl.
  4. Add the wet ingredients to the dry ingredients and stir until fully combined.
  5. Use a cookie scoop to drop dough onto the prepared baking sheet, pressing down slightly to flatten each cookie.
  6. Bake for 12-15 minutes until the edges are golden brown.

Notes

For nut allergies, substitute almond butter with sunflower seed butter. Use ripe bananas for maximum sweetness.
