Chocolate Covered Strawberry Brownies

Decadent brownies infused with fresh strawberries and topped with a rich chocolate ganache.

Ingredients

  • 1 cup butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter and let it cool briefly.
  3. In a large bowl, whisk melted butter with granulated sugar until combined.
  4. Add eggs one at a time, whisking after each addition, then stir in the vanilla.
  5. Sift in the flour, cocoa powder, and salt. Fold gently until just combined.
  6. Fold in the sliced strawberries carefully.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25 to 30 minutes until a toothpick comes out with a few moist crumbs.
  9. Cool completely on a wire rack before adding ganache.
  10. For ganache, heat heavy cream until simmering, pour over chocolate chips, and stir until smooth.
  11. Spread the ganache over the cooled brownies and top with additional strawberry slices.
  12. Chill for 20 to 30 minutes to set, then slice and serve.

Notes

To prevent sogginess, pat strawberries dry and toss them with flour before adding to the batter.
