  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chocolate ganache (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Stir in the vanilla extract and mix well until combined.
  4. In another bowl, whisk together the all-purpose flour, cocoa powder, and salt until evenly distributed.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a thick and pliable dough forms.
  6. Roll the dough into small balls, about 1 inch in diameter, placing them on the prepared baking sheet, spaced about 2 inches apart.
  7. Use your thumb or a small spoon to create an indentation in the center of each cookie.
  8. Bake for 10-12 minutes, or until the cookies are set. Allow them to cool completely on the baking sheet.
  9. Once cooled, fill the indentations with the chocolate ganache. Allow the ganache to set before serving.
