Delicious churro-flavored cookies that are easy to make, crisp on the edges, and soft inside.

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/2 cup sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Beat the softened butter and 1 cup sugar in a large bowl until smooth and creamy.
  3. Add the eggs one at a time, mixing after each. Stir in the vanilla.
  4. Whisk together the flour, baking powder, salt, and 1 tablespoon cinnamon in a separate bowl.
  5. Gradually add the dry ingredients to the butter mixture. Mix until just combined; the dough will be soft but manageable.
  6. Combine the 1/2 cup sugar with a pinch of extra cinnamon in a small bowl for rolling.
  7. Scoop or roll the dough into small balls, about 1 tablespoon each. Roll each ball in the cinnamon-sugar to coat.
  8. Place the coated balls on the prepared sheets and gently flatten each ball for even baking.
  9. Bake for 10 to 12 minutes, until the edges are lightly golden. Cool the cookies on wire racks.

Notes

For a gluten-free option, replace flour with a gluten-free baking blend. To enhance the cinnamon flavor, increase to 1 1/2 tablespoons.
