A delightful fusion of soft cinnamon rolls and creamy cheesecake, these cookies are indulgent yet simple to make.

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. Whisk together the flour, baking soda, salt, and ground cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Beat the cream cheese, powdered sugar, and milk until well combined and creamy.
  7. Scoop a small amount of cookie dough, flatten it, and place a teaspoon of cheesecake filling in the center. Form the dough around the filling.
  8. Place on the prepared baking sheets and bake for 12-15 minutes, or until edges are lightly golden and the cookies are set.

Notes

For the best results, ensure butter and cream cheese are properly softened. You can also experiment with adding nuts or chocolate chips for variation.
