Delicious cookies that capture the warm spiral of cinnamon rolls in a quick, grab-and-go treat, perfect for brunch or coffee time.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup powdered sugar (for glaze)
  • 1 to 2 tablespoons milk (to thin the glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. Whisk together the flour, baking soda, and salt in a medium bowl until evenly combined.
  3. Cream the softened butter with the granulated sugar and brown sugar until light and fluffy, about 2 to 3 minutes.
  4. Beat in the egg and vanilla until fully incorporated and smooth.
  5. Add the dry ingredients to the wet mixture in two additions, stirring gently until just combined.
  6. Combine 1 teaspoon ground cinnamon with about 1 tablespoon of granulated sugar to make the cinnamon-sugar filling.
  7. Roll the dough into a rectangle about 1/4 inch thick and sprinkle the cinnamon-sugar evenly across the rolled dough.
  8. Roll the dough tightly into a log, slice into 1/2-inch to 3/4-inch rounds, and place them on the prepared baking sheet.
  9. Bake for 10 to 12 minutes until edges are lightly golden. Allow to cool for 5 minutes before transferring to a rack.
  10. Whisk the powdered sugar with milk to make a glaze and drizzle it over the cooled cookies.

Notes

Store cookies in an airtight container for up to 3 days. For softer cookies, include a slice of apple in the container.
