Transform ordinary bread into delightful cinnamon sugar roll-ups in under 20 minutes – a perfect treat for busy mornings and brunch gatherings.

  • 6 slices bread (white or brioche)
  • 2 large eggs
  • 1/4 cup (60 ml) milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons (28 g) unsalted butter, melted

Instructions

  1. Make the cinnamon-sugar: In a small bowl combine the granulated sugar and ground cinnamon. Stir until evenly mixed.
  2. Whisk the egg mixture: In a shallow dish whisk the eggs, milk, and vanilla until smooth and pale.
  3. Prepare the bread: Flatten each slice with a rolling pin or the heel of your hand.
  4. Spread butter: Brush a thin layer of melted butter over each flattened slice.
  5. Sprinkle the filling: Evenly sprinkle the cinnamon-sugar over the buttered bread.
  6. Roll tightly: Starting at one short end, roll each slice into a tight cylinder.
  7. Dip in egg wash: One at a time, dip each roll-up into the egg mixture.
  8. Cook: Heat a nonstick skillet over medium heat and add a little melted butter or oil. Fry the roll-ups until golden brown.
  9. Finish and serve: Transfer to a plate and remove toothpicks before serving.
