Cinnamon Swirl Banana Bread

A quick and cozy banana bread featuring a cinnamon-brown-sugar swirl, perfect for using up overripe bananas.

  • 3 ripe bananas
  • 1/3 cup melted unsalted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar (light or dark)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 4×8-inch loaf pan and set aside.
  2. Mash the ripe bananas with a fork until mostly smooth. Stir in the melted butter.
  3. Add the baking soda and a pinch of salt. Mix in granulated sugar, beaten egg, and vanilla extract until combined.
  4. Fold in the flour until just combined, careful not to overmix.
  5. In a small bowl, combine ground cinnamon with brown sugar.
  6. Pour half the banana batter into the prepared pan. Sprinkle half of the cinnamon-sugar mix evenly over the batter. Pour the remaining batter on top and sprinkle with the remaining cinnamon-sugar.
  7. Gently swirl the cinnamon-sugar through the top layers of batter with a knife or skewer.
  8. Bake for 50 to 60 minutes, or until a toothpick comes out clean or with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for the best flavor. Store cooled slices in an airtight container for up to 3 days, or wrap and freeze for up to 3 months.
