A simple and fast stir-fried noodle dish perfect for weeknight dinners, featuring flavorful chow mein noodles tossed with mixed vegetables, garlic, and soy sauce.

Ingredients

  • 8 oz chow mein noodles
  • 1 cup mixed vegetables (bell peppers, carrots, snap peas)
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated or finely minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Bring a pot of salted water to a boil. Cook the chow mein noodles according to package instructions until just tender. Drain and set aside.
  2. Heat a large skillet or wok over medium-high heat. Add the vegetable oil and let it warm until shimmering.
  3. Add the minced garlic and grated ginger. Stir and cook for about 30 seconds until fragrant.
  4. Toss in the mixed vegetables and stir-fry for 2 to 3 minutes until they are crisp-tender.
  5. Add the cooked noodles to the pan and pour the soy sauce over everything. Toss continuously to coat and heat through for about 2 minutes.
  6. Taste and season with salt and pepper as needed. If the noodles feel dry, add a splash of water or additional soy sauce and toss again.
  7. Serve hot, garnished with chopped green onions if desired.

Notes

For a gluten-free version, swap soy sauce for tamari or a gluten-free soy alternative. Add tofu or a pre-cooked protein for extra texture.
