A refreshing pasta salad combining vibrant vegetables, creamy feta cheese, and tri-color rotini pasta, perfect for any occasion.

Ingredients

  • 8 oz tri-color rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the tri-color rotini pasta according to package instructions until al dente. Drain and cool.
  2. Combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and black olives in a large bowl.
  3. Whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, Italian seasoning, salt, and pepper to create the vinaigrette in a separate bowl.
  4. Pour the vinaigrette over the pasta salad and toss to combine.

Notes

Allow the salad to chill in the refrigerator for at least 30 minutes before serving for the best flavor. Feel free to experiment with different vegetables and cheeses.
