Classic Pioneer Woman Potato Soup

A creamy, comforting potato soup that is easy to make and perfect for weeknights.

Ingredients

  • 4 large potatoes, peeled and diced (Russet or Yukon Gold)
  • 1 onion, chopped (yellow or sweet)
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Green onions or chives for garnish

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and cook until soft and translucent, about 4 to 5 minutes. Stir in the minced garlic and cook for 30 to 60 seconds until fragrant.
  3. Add the diced potatoes and pour in the broth. Increase heat and bring to a boil.
  4. Reduce heat to a simmer. Cook until the potatoes are tender when pierced with a fork, about 15 to 20 minutes.
  5. Turn off the heat. Use a potato masher to mash some of the potatoes for body, or use an immersion blender for a smoother texture.
  6. Stir in the heavy cream. Warm gently for a few minutes; do not boil once the cream is added.
  7. Taste and season with salt and pepper. Ladle into bowls and garnish with chopped green onions or chives.

Notes

For a lighter option, use half and half or combine milk with cornstarch. Potatoes can be frozen but may change texture after thawing.
