A delightful one-pot soup combining fresh vegetables and creamy goodness, perfect for chilly days.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups mixed vegetables (such as zucchini, green beans, and spinach)
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as parsley or dill)
  • Bread for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Pour in the vegetable broth and add the mixed vegetables, thyme, basil, salt, and pepper.
  5. Bring to a simmer and cook until the vegetables are tender, about 10-15 minutes.
  6. Stir in the heavy cream or coconut milk and heat through.
  7. Adjust seasoning as needed.
  8. Serve hot, garnished with fresh herbs, and enjoy with bread.
