Delightfully rich cookies combining creamy cheesecake, buttery caramel, and a hint of sea salt.

  • 1/2 cup Granulated Sugar
  • 1 cup Brown Sugar
  • 2 large Eggs (room temperature)
  • 1 tablespoon Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 cup Crushed Graham Crackers
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt (sea salt)
  • 8 ounces Cream Cheese (softened)
  • 1/2 cup Butter (softened)
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Brown Sugar
  • 1/2 cup Butter
  • 1/2 cup Heavy Whipping Cream
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together 1 cup of unsalted butter, 1/2 cup of granulated sugar, and 1 cup of brown sugar until light and fluffy.
  3. Add in 2 eggs and 1 tablespoon of vanilla extract, mixing until well combined.
  4. Whisk together 3 cups of all-purpose flour, 1 cup of crushed graham crackers, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1 teaspoon of salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Blend 8 ounces of cream cheese with 1/2 cup of softened butter and 2 cups of powdered sugar. Add 1 teaspoon of vanilla extract, 1 cup of brown sugar, 1/2 cup of butter, and 1/2 cup of heavy whipping cream, mixing until smooth.
  7. Measure out cookie dough and flatten it slightly. Place about 1 tablespoon of cream cheese filling in the center and fold the dough around the filling.
  8. Place the filled cookies on the baking sheet and bake for 12-15 minutes, until the edges are lightly golden.

Notes

For best results, use room temperature ingredients and don’t over-mix the dough.
