Deliciously crunchy tortillas stuffed with creamy crab and shrimp filling, perfect for game nights or casual gatherings.

  • 1/2 lb cooked shrimp, finely chopped
  • 1/2 lb cooked crab meat, shredded
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup queso dip (mild or spicy)
  • 1 tbsp fresh cilantro, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 8 small flour tortillas
  • 2 tbsp butter or oil (for frying)

Instructions

  1. In a medium bowl, combine the finely chopped shrimp, shredded crab, Monterey Jack, softened cream cheese, queso dip, cilantro, garlic powder, and smoked paprika. Mix until evenly combined and creamy. Taste and adjust seasoning.
  2. Spoon 2 to 3 tablespoons of the filling onto each tortilla, keeping the filling toward one side to make rolling easier.
  3. Roll each tortilla tightly and secure with a toothpick through the seam to prevent unrolling while frying.
  4. Heat a skillet over medium heat and add butter or oil. Once hot, place the rolled tortillas seam-side down and fry until each side is golden and crisp, about 2 to 3 minutes per side. Work in batches to keep the pan hot and crunchy.
  5. Transfer cooked rolls to a plate and remove toothpicks. Arrange on a serving platter and drizzle warm queso over the top. Sprinkle with fresh cilantro and serve immediately while the cheese is gooey.

Notes

For a lighter option, reduce cream cheese to 1/4 cup and add a splash of lime. To keep leftovers crispy, fry in small batches and keep finished rolls on a wire rack in a low oven until serving.
