A quick yet indulgent dish combining pan-seared steak with fresh cheese tortellini and a garlic-forward cream sauce.

Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak, sirloin or ribeye
  • Salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Cook the tortellini according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. Pat the steak dry and season generously on both sides with salt, black pepper, garlic powder, and a light sprinkle of smoked paprika.
  3. Heat 2 tablespoons olive oil in a heavy skillet over medium-high heat until shimmering. Sear the steak 3 to 5 minutes per side depending on thickness for medium-rare to medium.
  4. Transfer the steak to a cutting board and let it rest 5 to 10 minutes. Slice thinly against the grain after resting.
  5. In the same skillet, lower heat to medium and add 4 tablespoons butter. Once melted, add the minced garlic and sauté until fragrant, about 30 to 45 seconds.
  6. Pour in 1 cup heavy cream and 3/4 cup whole milk. Stir and bring to a gentle simmer; do not boil hard. Simmer 2 to 3 minutes until the sauce begins to thicken slightly.
  7. Gradually stir in 1 1/4 cups grated parmesan until melted and the sauce is smooth. If the sauce is too thick, add a splash of reserved pasta water to loosen.
  8. Add the drained tortellini and sliced steak to the skillet. Toss gently to coat everything in the sauce. Heat just until warmed through, about 1 to 2 minutes.
  9. Finish with chopped parsley and cracked black pepper. Serve immediately while the sauce is silky and hot.

Notes

Use fresh or refrigerated tortellini for the best texture. Adjust cooking time for frozen varieties. For a lighter dish, consider using half-and-half instead of heavy cream.
