A comforting yet quick dish featuring cheese tortellini, tender steak, and a creamy garlic sauce.

Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt and black pepper to taste
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups Parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional)

Instructions

  1. Bring a large pot of salted water to a boil for the tortellini.
  2. Pat steak dry and season generously with salt, black pepper, garlic powder, and smoked paprika.
  3. Heat olive oil in a skillet over medium-high heat until shimmering.
  4. Sear steak 2 to 4 minutes per side for medium-rare, then let rest for 5 to 10 minutes.
  5. Cook tortellini according to package directions until al dente, reserving 1/2 cup pasta water, then drain.
  6. In the same skillet, melt butter over medium heat, add minced garlic and sauté until fragrant.
  7. Pour in heavy cream and whole milk, bringing to a gentle simmer.
  8. Stir in Parmesan until smooth, adjusting consistency with reserved pasta water if necessary.
  9. Taste and season with salt, black pepper, and red pepper flakes.
  10. Slice rested steak thinly against the grain.
  11. Add cooked tortellini to the sauce, folding to coat, and gently fold in steak slices before serving.
  12. Garnish with chopped parsley and cracked black pepper.

Notes

Use freshly grated Parmesan for best melting and texture. Serve immediately in wide bowls for the best presentation.
