Ingredients

  • 1/2 cup almond butter or peanut butter
  • 1/4 cup maple syrup or agave syrup
  • 1/2 cup dried cranberries
  • 1/4 cup chia seeds
  • 1/4 cup shredded coconut (optional)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine oats, nut butter, maple syrup, dried cranberries, chia seeds, shredded coconut (if using), vanilla extract, and a pinch of salt.
  2. Stir until the mixture is evenly combined.
  3. Shape tablespoon-sized portions into balls, pressing tightly.
  4. Place balls on a parchment-lined baking sheet.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the fridge for up to a week.

Notes

For a nut-free version, replace almond or peanut butter with sunflower seed butter. You can also customize with other dried fruits or protein powder.
