1/2 teaspoon baking soda
1 teaspoon cornstarch

1/2 cup unsalted butter
4 oz cream cheese
3/4 cup granulated sugar
1/2 cup brown sugar
1 large egg
2 teaspoons vanilla extract
1 teaspoon lemon zest
1 cup blueberries (fresh or frozen)
4 oz cream cheese (for filling)
1/4 cup powdered sugar
1/2 teaspoon vanilla extract (for filling)
Instructions
Mix together 4 oz of cream cheese, 1/4 cup powdered sugar, and 1/2 teaspoon vanilla extract. Blend until smooth. Portion the mixture out and freeze these pieces for 30 minutes.
Whisk together 2 1/4 cups all-purpose flour, 1/2 teaspoon baking soda, 1 teaspoon cornstarch, and 1/2 teaspoon salt. Set this aside.
Cream 1/2 cup unsalted butter with 3/4 cup granulated sugar and 1/2 cup brown sugar until light and fluffy.
Add in 1 large egg, 2 teaspoons vanilla extract, and 1 teaspoon lemon zest. Continue to mix until well combined.
Incorporate the dry ingredients into the wet mixture gradually. Mix until just combined.
Fold in 1 cup of blueberries gently to keep them whole.
Preheat your oven to 350°F. Scoop a portion of dough, flatten it, and place the frozen cheesecake filling in the center, then cover with more dough.
Arrange on a baking sheet lined with parchment paper and bake for 11 to 13 minutes, or until lightly golden.
Notes
For best results, ensure butter and cream cheese are at room temperature. Fresh blueberries are recommended for optimum flavor.
