A comforting and creamy dish packed with broccoli and quinoa, perfect for weeknight dinners or a fulfilling lunch.

Ingredients

  • 2 cups broccoli florets
  • 1 cup cooked quinoa
  • 1 cup cream cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup vegetable broth
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the cooked quinoa, broccoli florets, cream cheese, shredded cheese, vegetable broth, garlic, salt, pepper, and paprika until well combined.
  3. Transfer the mixture to a greased baking dish and spread it evenly.
  4. If desired, sprinkle breadcrumbs on top for added crunch.
  5. Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.

Notes

Use fresh broccoli for the best flavor. Leftovers can be stored in the refrigerator for up to three days, or frozen for three months.
