A creamy and flavorful Cajun butter chicken dish made effortlessly in a crockpot, perfect for cozy dinners.

  • 2 lbs (900g) boneless skinless chicken breasts
  • 2 tbsp (30g) Cajun seasoning blend
  • 1/2 cup (115g) unsalted butter (cubed)
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1 tbsp (15g) cornstarch (mixed with 1 tbsp (15ml) cold water)
  • 1 cup (200g) long grain white rice (uncooked)
  • 2 tbsp (10g) fresh green parsley (finely chopped)
  • 1 tsp (2g) coarse black pepper
  • 1/2 tsp (1g) red paprika flakes

Instructions

  1. Sauté chicken in a skillet over medium heat until lightly browned for a few minutes on each side.
  2. Place the chicken in the crockpot and sprinkle with Cajun seasoning.
  3. Add the cubed butter on top of the chicken.
  4. Pour in the chicken broth and heavy cream, ensuring the chicken is coated.
  5. Cook on low for 6 to 8 hours or until the chicken is tender and reaches an internal temperature of 165°F.
  6. Mix the cornstarch with cold water and stir it into the sauce for 15 minutes to thicken it.

Notes

Serve over rice and garnish with fresh parsley. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
