A comforting classic that blends creamy cheddar cheese with fresh broccoli, perfect for busy weeknights.

Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon ground mustard

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic. Cook until the onions are softened.
  3. Incorporate the broccoli florets and pour in the vegetable broth. Bring everything to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. Use an immersion blender to puree the soup until smooth, or transfer batches to a blender for this step.
  5. Stir in the heavy cream, shredded cheddar cheese, paprika, ground mustard, salt, and pepper. Cook until the cheese has melted and the soup is heated through.

Notes

Use fresh ingredients for the best flavor; frozen broccoli can work in a pinch. Adjust thickness by changing the amount of vegetable broth.
