A comforting dish bringing together tender chicken and vibrant broccoli in a creamy sauce, perfect for a weeknight dinner.

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 2 cups broccoli florets
  • 1 lb chicken breast, diced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Cook the pasta according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli florets to the boiling pasta water. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden and cooked through, about 5-7 minutes.
  3. Add minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Lower the heat and pour in the heavy cream, stirring to combine.
  5. Gradually add the Parmesan cheese, stirring until smooth and creamy.
  6. Add the cooked pasta and broccoli to the skillet, tossing to coat in the sauce.

Notes

Can substitute pasta for whole grain or gluten-free varieties. Customize with different vegetables like spinach or bell peppers.
