- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- Tortilla chips for topping (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, cooked rice, and salsa in a large bowl. Mix until evenly combined.
- Spread the mixture into a greased 9×13 inch casserole dish.
- Top with shredded cheese and crumbled tortilla chips if using.
- Bake in the preheated oven for 25-30 minutes or until heated through and cheese is melted.
Notes
Feel free to customize with your choice of ingredients. Leftover chicken or rice can also work well.
