Chicken Burrito Casserole

A delicious and easy-to-make casserole that combines the flavors of a classic burrito, perfect for weeknight dinners or gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups rice, cooked
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup tortilla chips, crushed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, cooked rice, black beans, corn, diced tomatoes, taco seasoning, salt, and pepper in a large mixing bowl.
  3. Spread half of the chicken mixture in a greased 9×13 inch casserole dish.
  4. Sprinkle half of the crushed tortilla chips and half of the cheese over the chicken mixture.
  5. Repeat the layers with the remaining chicken mixture, chips, and cheese.
  6. Cover the dish with foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

Notes

Use rotisserie chicken for quicker prep. Customize with your favorite beans or veggies.
