A comforting low-carb casserole combining tender chicken with cauliflower rice and creamy cheese, perfect for a filling weeknight dinner.

  • 2 cups cooked shredded chicken
  • 4 cups cauliflower rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup chicken broth
  • 1/2 cup cream cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet and sauté the onion and garlic until soft.
  3. Add the shredded chicken, cauliflower rice, chicken broth, cream cheese, and Italian seasoning. Stir until well combined and heated through.
  4. Season the mixture with salt and pepper to taste.
  5. Transfer the mixture to a greased casserole dish.
