A comforting and customizable casserole combining shredded chicken, rice, and enchilada sauce, topped with melty cheese.

Ingredients

  • 2 cups cooked rice
  • 1 lb cooked chicken, shredded
  • 1 can (10 oz) enchilada sauce
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked rice, shredded chicken, enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper in a large bowl.
  3. Stir in half of the cheese.
  4. Spread the mixture into a greased 9×13 inch baking dish.
  5. Top with the remaining cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

Feel free to modify the recipe with different types of cheese or beans. Let the casserole sit for a few minutes after baking for easier serving.
