A comforting pasta dish combining the flavors of traditional pot pie with a creamy chicken and vegetable mixture.

Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta until al dente.
  2. Sauté onion and garlic in olive oil until soft.
  3. Add shredded chicken and mixed vegetables.
  4. Simmer with chicken broth and heavy cream.
  5. Combine with cooked pasta and heat through.

Notes

Feel free to substitute with your favorite pasta shape or leftover roasted chicken. For a lighter version, replace heavy cream with whole milk.
