  • 1 cup celery, diced

  • 4 cups chicken broth
  • 1 cup heavy cream

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add carrots, celery, and onion, and sauté until vegetables are tender.
  4. Pour in chicken broth and bring to a boil.
  5. Add rice to the pot and reduce heat to a simmer.
