Creamy Cowboy Soup

A comforting one-pot soup with ground beef, potatoes, black beans, corn, tomatoes, and cream.

Ingredients

  • 1 lb ground beef (or turkey or a meat alternative)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth (use vegetable broth for vegetarian)
  • 14.5 oz diced tomatoes, canned with juice
  • 1 cup corn, canned or frozen
  • 15 oz black beans, drained and rinsed if canned
  • 2 medium potatoes (Yukon Gold or russet), diced small
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder (adjust for heat preference)
  • 1 tsp ground cumin
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 cup shredded cheddar cheese (freshly shredded melts best)

Instructions

  1. Heat a large pot over medium-high heat. Add the ground beef and break it up with a spoon. Cook until well browned and no pink remains, about 6 to 8 minutes.
  2. Push meat to the side and add the chopped onion to the empty space. Sauté until translucent, about 4 minutes. Stir in the minced garlic and cook 30 seconds until fragrant.
  3. Sprinkle in smoked paprika, chili powder, cumin, salt, and black pepper. Stir to toast the spices for 30 seconds.
  4. Add the diced potatoes, canned tomatoes with their juice, and beef broth. Stir, scraping any browned bits off the bottom. Bring to a simmer.
  5. Reduce heat to medium-low. Cover and simmer until potatoes are tender, about 12 to 15 minutes depending on dice size. Stir occasionally.
  6. Once potatoes are tender, stir in black beans and corn. Heat through for 3 to 5 minutes.
  7. Remove the pot from heat and stir in the heavy cream. Adjust seasoning to taste. If adding cheddar into the soup, stir it in now until melted, or reserve for topping.
  8. Ladle into bowls and garnish with extra cheddar, chopped green onions, or a squeeze of lime if desired.

Notes

For a lighter finish, use half-and-half instead of heavy cream. Freshly shredded cheddar melts smoother than pre-shredded varieties. Store in an airtight container for up to 4 days.
