Delicious chicken thighs in a rich, garlicky cream sauce served over fluffy rice. Perfect for quick weeknight dinners or special family meals.

Ingredients

Scale
  • 1 lb chicken thighs, diced
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Rinse the rice thoroughly before cooking.
  2. Combine the rice with chicken broth in a pot and bring to a boil. Reduce to low heat, cover, and cook for about 18-20 minutes until liquid is absorbed.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and season with salt and pepper. Cook for 7-8 minutes until golden and cooked through. Remove and set aside.
  4. Add diced onion to the skillet and cook for 3-4 minutes until softened.
  5. Add minced garlic to the onions and cook for 1-2 minutes until fragrant.
  6. Pour in the heavy cream, stir, and allow to simmer for 3-4 minutes until slightly thickened.
  7. Return the cooked chicken to the skillet, stirring gently to coat in the sauce. Cook for an additional 2 minutes until heated through.

Notes

For best results, ensure chicken is cut into uniform pieces. Fresh parsley enhances flavor. Adjust seasoning as needed.
