A quick and comforting creamy garlic chicken ramen that combines a silky garlic-infused broth, tender chicken slices, and hearty ramen noodles.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 2 cups ramen noodles
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli)
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Add the chicken to the pot and cook until browned and cooked through, about 6 to 7 minutes per side.
  4. Remove the chicken to a cutting board and slice thinly against the grain.
  5. In the same pot, add the minced garlic and sauté for about 30 to 45 seconds until fragrant.
  6. Pour in the chicken broth and bring it to a simmer.
  7. Add the ramen noodles and the mixed vegetables. Cook according to the noodle package instructions, usually 2 to 4 minutes.
  8. Stir in the heavy cream and soy sauce, mixing gently until the broth is uniform and creamy.
  9. Return the sliced chicken to the pot and heat through for 1 to 2 minutes.
  10. Taste and adjust seasoning with salt and pepper as needed. Ladle into bowls and garnish with chopped green onions. Serve immediately.

Notes

For gluten-free version, use tamari and rice noodles. Add lemon juice for brightness if the broth feels too rich.
