Creamy Garlic Parmesan Chicken and Fusilli

A quick and comforting dish with tender chicken, twisted fusilli, and a garlicky Parmesan cream sauce, perfect for weeknight meals.

Ingredients

  • 2 large Boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb (450 g) Twisted pasta (fusilli), or penne/rotini as substitutes
  • 3 Tbsp Unsalted butter, divided
  • 45 cloves Fresh garlic, minced
  • 1 1/2 cups Heavy cream (or half-and-half plus 2 Tbsp butter for a lighter version)
  • 1/2 cup Chicken broth
  • 1 cup Grated Parmesan cheese, freshly grated preferred
  • 1 tsp Italian seasoning, divided
  • 1/4 tsp Red pepper flakes, optional
  • Fine salt and black pepper, to taste
  • 2 Tbsp Fresh parsley, chopped for garnish

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente according to package directions. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  2. Pat the chicken cubes dry with paper towels. Season with salt, pepper, and 1/2 tsp Italian seasoning.
  3. Heat a large skillet over medium-high heat and melt 1 Tbsp butter. Add the chicken in a single layer and sear for 3 to 4 minutes per side until golden.
  4. Transfer the chicken to a plate, keeping any juices in the pan.
  5. Reduce the heat to medium. Add the remaining 2 Tbsp butter to the skillet.
  6. Stir in the minced garlic and red pepper flakes. Cook for 30 to 60 seconds until fragrant but not browned.
  7. Pour in the chicken broth and scrape the bottom of the pan to loosen browned bits.
  8. Stir in the heavy cream and remaining 1/2 tsp Italian seasoning. Let simmer gently for 2 to 3 minutes to thicken slightly.
  9. Turn the heat to low. Gradually sprinkle in the grated Parmesan while stirring.
  10. Return the seared chicken and any accumulated juices to the skillet. Add the drained pasta and toss to combine, using reserved pasta water if the sauce is too thick.
  11. Taste and adjust salt and pepper. Scatter chopped parsley over the top and serve immediately.

Notes

For added texture, serve with a green salad. Leftovers can be stored in the fridge for up to 3 days, reheat with a splash of milk or reserved pasta water.
