Ultimate Creamy Garlic Parmesan Chicken Pasta

A rich and satisfying dish blending creamy sauce with tender chicken and pasta, perfect for any weeknight dinner.

  • 2 large Boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb (450 g) Twisted pasta (fusilli), or choose penne or rotini
  • 3 Tbsp Unsalted butter, divided
  • 45 cloves Fresh garlic, minced
  • 1 ½ cups Heavy cream
  • ½ cup Chicken broth
  • 1 cup Grated Parmesan cheese (freshly grated preferred)
  • 1 tsp Italian seasoning, divided
  • ¼ tsp Red pepper flakes, optional
  • Fine salt and black pepper, to taste
  • 2 Tbsp Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Reserve ½ cup of pasta water, then drain the pasta.
  2. Pat the chicken dry with paper towels. Season with salt, pepper, and ½ tsp Italian seasoning.
  3. In a large skillet, heat 1 Tbsp of butter over medium-high heat. Sear the chicken for about 3–4 minutes on each side, or until golden brown and cooked through (165°F). Transfer the chicken to a plate and keep the juices in the skillet.
  4. Lower the heat to medium. Add the remaining 2 Tbsp of butter to the skillet. Add minced garlic and optional red pepper flakes, cooking for 30–60 seconds until fragrant.
  5. Pour in the chicken broth, scraping the browned bits from the pan. Stir in the heavy cream and remaining ½ tsp Italian seasoning, then let it simmer gently for 2–3 minutes to thicken slightly.
  6. Reduce heat to low and gradually stir in the Parmesan cheese until fully melted and the sauce is velvety smooth. Return the chicken (and any juices) to the skillet, then add the drained pasta. Toss everything together until the pasta is evenly coated. If the sauce is too thick, add a splash of reserved pasta water to achieve a glossy finish.
