A comforting and creamy baked potato soup, perfect for chilly days with customizable toppings.

Ingredients

  • 4 large potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 4 strips of beef bacon, cooked and chopped
  • 1/2 cup green onions, chopped
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Peel and cube the potatoes.
  2. Combine the potatoes and chicken broth in a large pot. Bring to a boil.
  3. Cook until the potatoes are tender, about 15-20 minutes.
  4. Mash the potatoes slightly for a creamy texture.
  5. Add the sour cream, milk, and season with salt and pepper.
  6. Simmer for another 5-10 minutes until heated through.
