A quick and comforting creamy garlic Parmesan chicken dish that’s perfect for busy weeknights.

  • 2 large boneless, skinless chicken breasts (about 1 to 1 1/4 pounds total)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Prepare the chicken. Slice each breast in half horizontally or lightly pound to an even thickness of about 1/2 inch. Season both sides with salt, pepper, and Italian seasoning.
  2. Heat the pan. Warm the olive oil in a large skillet over medium heat until shimmering.
  3. Sear the chicken. Add the chicken and cook undisturbed for 4 to 5 minutes per side, until golden brown and an instant-read thermometer reads 165°F in the thickest part. Transfer the cooked chicken to a plate and cover loosely to rest.
  4. Make the garlic base. Lower the heat to medium-low. Add the butter to the skillet. When it melts, add the minced garlic and sauté for 30 to 45 seconds until fragrant but not browned.
  5. Deglaze and build the sauce. Pour in the heavy cream, scraping up any browned bits from the pan with a wooden spoon. Bring the cream to a gentle simmer.
  6. Add the cheese. Stir in the grated Parmesan until it melts and the sauce thickens slightly, about 2 to 3 minutes. Taste and season with more salt and pepper if needed.
  7. Finish with the chicken. Return the chicken to the skillet, spooning sauce over each piece. Simmer for 2 to 3 minutes to warm through and allow the sauce to cling.
  8. Garnish and serve. Sprinkle with fresh parsley if using and serve immediately.

Notes

For a lighter option, use half-and-half plus a teaspoon of cornstarch to thicken. Freshly grated Parmesan yields a smoother sauce.
